Gargoyles, So they are fast, aggressive, tough, and --- have zero weaknesses?
Whats peoples tactis vs these guys?
Aggressive
Fast
Gap Closer
Poison Breath
AOE ground slaps
Stagger immunity
Signs do little to nothing
Bombs pretty useless
Rock throw if you try and stay at a distance

Any tips for dealing with these things, trying to get this treasure but after about 20 deaths and not even getting its health below half, i'm wondering if is some trick to it...

Gargoyles are weak to this combination (worked for me): Do quen (not necessary but good for protection against their stomping AOE) and then set Yrden trap (Slows them down and when you hit them it staggers them on Blood and Bones difficulty), keep sidestepping and hitting them as long as yrden slows them down OR until they try to do the stom AOE.

Roll out of the way and get behind for some critical hits and then role away again when it is about to strike, it works really well ;)

Yeah, Yrden is really good against Gargoyles to dodge out of the AoE stomp.

Finally beat it by just using heavy attacks to stagger, and quen, and lots of rolling out of the AOE's not that i got ANYTHING for doing it! but damn was rough. The real issue was that he could kill me in one hit...which is strange since not even the level 20 elemental could do that...or the level 26 royal wyvern.... hmm anyway, those guys are hard as balls, for a sign/alchemy build.

The gargoyle is especially annoying because it's in the dark and I keep rolling and getting stuck. The reload time is tedious since the game can't just reset the battle. I've died probably twenty times now because of how difficult it is to control. I don't know if the witch was supposed to be in there with you but after I died the first time she got locked out and left me to do the rolly polly on my own.

Eventually I managed to get it but only because I had the tiny room memorized and knew about how long to stay away to regenerate my shields. The shield is essentially a free hit as it blocks all damage from the AOE which would otherwise two hit kill.

It definitely helps if Keira is in there with you. She will attack as well, and in my latest playthrough, actually delt the killing blow.

I do prefer the look from Witcher 2. They look kind of...ridiculous in 3.

Luckily they're pretty rare, but there are a few you'll have to deal with while treasure hunting during the course of the game. Better gear doesn't make much of a difference with the higher level ones, they remain a pain in the ass.
