Yet there is one question i have :
If i change the Gamma and go back to Borderless Window Mode, will the Gamma changes be saved or do the Chagned only apply in Fullscreen Mode?

For it to work the game need to be in fullscreen mode. When you change state, you need to restart game to take effect.
Then you'll have the "gamma" option under "graphics".

If you want to play in bordeless windowed, you will not be able to adjust gamma in-game, it's how Windows window management works.
The only workaround for it is to adjust gamma on your graphics card panel or Windows color management/display calibration.
This game in particular have no real reason to play in bordeless window: it'll have worse fps than dedicated fullscreen, it'll use more ram because of Desktop Window Manager of Windows, etc etc etc yadda yadda yadda... Steam's overlay will let you do pretty much anything you wanted from alt-tabbing in a windowed mode. But this is my humble opinion...
