It took half an hour intense cramped battle in a tiny cave, I was helped by filling my sword with bleed runes, the bleeding proc was doing damage to it was faster than my attacks were and it seemed to stack.
The XP is worth it too, it blasted me up a whole level and a half
Edit just wrecked a level 24 fire elemental at level 15 that took a while though, just be patient loads of dodging
I'm a little late to the party, but I found the key to killing the Earth elementals at a low level is always being on Roach's back.
Every hit done while he is sprinting is a crit.
Just beat a level 20 Earth Elemental at level 11.
I probably wouldn't do this fight at level 11 if I were confined to a cave, way too long otherwise.
Anyway, the levelling system is designed so that if you're that much under levelled compared to the monster you're fighting you really won't do that much damage. Blade oil, fighting from horseback and heavy use of signs will help but to avoid a 10-15 minute (real time) battle means coming back when there's less than 5 levels difference between you and the monster.
