If you don't know yet just keep those items in your inventory - when you start crafting armors or weapons you will notice whan items you need, and then you'll start recognizing craft items. It takes time to learn, but don't get discouraged - crafting is very helfull and fun in this game.

I usually just dismantle weapons, armor, and hides. You get iron/leather out of most of them which I'm sure you will need for other items later in the game. Any "junk" I normally just sell.

If I really need money, I will reconsider selling hides. They are usually worth alot when in quantity.

I dismantle only when i need it.
Other than that, i keep each material at 10 each, and sell the extra.
When i happen to find precious objet (giving me gem rare gem stone and stuff like that, i keep them as it is until i have a need for the component (they does not much anyways).

With the tons of crafting materials you found (4 or 5 silver ingots in the starting area) the limited inventory, and the merchants selling crafting componants, I rarely feel the need to dismantle. If an item is very valuable I check with the merchant to see if it can give rare componants, but moslty I sell all the junk and pelts.
