When a character brings so much emotions in you - it's a well written character. Hope Witcher 4 will have at least some of it.
Why people like her? Well, I would first start with assumption that they might empathize with her because they might be just as rotten as her in their own way, you'd be surprised how many people empathize with characters like that, then there's also the case of the naughtiness.
You can see this attitude most in her motivations concerning the quest "A Tower Full of Mice". She doesn't want to lift the curse on that area for the sake of helping Oreton's fishermen, she's doing it because she thinks she can use the knowledge in the tower as a bargaining tool with Radovid. Think about that for a moment. She's willing to hand knowledge on a fatal, contagious disease to RADOVID, and for no other reason than to get somewhere else. We KNOW what he's likely to do with that information, and diseases do NOT respect borders.
In this particular case, they even let you vent your anger at the annoying character in a much more direct manner than usual - there's always the 'kill her' option at the end of the Fyke Island stuff if you just can't stomach her any more.
What excuse could you possibly have for her leaving you unconscious in the middle of the night half-naked? Lie to me all you want and treat me like a delivery boy all you want, but now you've effectively turned me into a live bait. Wolves, drowners, rotfiends, etc. THAT I cannot excuse.

She's a solid 6, ofc I'd bang her, but that's not the point.
Yennefer is much worse than Keira in regards to withholding the truth and manipulation. Just in the main quest she treats Geralt so much worse than Keira... Even during her personal quest she never tells him anything until the very end and also manipulates him constantly. So, basically, that's kind of an expected behavior at this point?
She didn't leave you in a really dangerous place and also it seems you were out only briefly, not hours but minutes, considering the color of the sky and that you caught up with her immediately.. Lore-wise there are very few monsters left in the world and there is a village very close, so there should not be any bandits there as well. We also don't know, but she might have cast a magic protection spell, like detection interference so that no one would notice Geralt.
And she helps you later at Kaer Morhen, plus Lambert is happy, so that's awesome.
