What should I do with this witcher?
I am doing a contract in Novigrad where I find out someone from the school of the cat killed a whole village cause they were going to pay him 12 crowns for a Leshen.

I have the choice to let him go or kill him but I don't know what to do I haven't read any of the books so I don't really know if Witchers are good or bad let alone where Geralt stands on the moral compass. I just understand they do things for money. However I heard the school of the cat housed a lot of not so good Witchers. This guy pulling a Itachi because they could not afford to pay him on the price they agreed on still doesn't sit right with me because a Witcher has a higher chance of survival right?

All this just to ask what would Geralt do? Or what is the better option to pick Kill him or spare him

This quest is a great example of the typical choice in the Witcher series; there is no right or wrong choice, only shades of grey.

You are playing as Geralt, so what the better option is depends on your moral compass and views. Both killing and sparing Gaetan can be easily justified.

Personally, I think canon Geralt would spare Gaetan, having had a similar experience (resulting in a mass killing of locals) himself, so that's what I choose to do. However, it's just my opinion.
i would say just go with what your guts tells you its part of the fun

I think Geralt would have probably spared him. He was wronged, left for dead, nickel and dimed, every right to be angry, Geralt isn't perfect etc. etc...

But I'm not Geralt and I don't really care. They gave me the choice so I killed him because I felt like he was way out of line. It was such a disproportionate and remorseless response that I didn't need to think about it for long.
The quest you seem to be on is the "Beast of Honorton" depending on your choices "Where the cat and the wolf play" is the next quest all these quests are located in Velen. I spare Gaetan the quest rewards are worth it and thanks to Geralts history killing him would be hypocritical as our wolf witcher explains to him.
I usually kill the guy. My number one reason for this is because he didn't hold back. Killing those first two guys? Yeah, that was justifiable, as it was a clear case of self-defense. He SHOULD have stopped there. But the problem is that he DIDN'T stop. He killed everyone in the village, except for that little girl. Those deaths were nothing but murder. There were other methods that he could have used, like dropping a Samun and then escape while everyone else was blinded, Axii-ing the villagers into forgetting his actions, or using Aard to throw them off-balance and then running. But did he use those alternatives? No. He let his rage get the best of him, and in doing so, murdered a bunch of villagers.

I did what geralt most likely would have done and let the guy go. The world has too many monsters. And not enough witchers. They are actually going extinct, so needlessly killing one didn't seem wise. The cold reality is that this guy will save far more than he killed. He also clearly had remorse, not any enjoyment for the murders.
