Much easier if you have Fleet Footed perk. It reduces damage to 0 when dodging
Wait for charge, evade, smack him twice, jump away, repeat until he changes.
2nd stage:
Always move, always dodge. Be mindfull of black goo on ground, it ties you in place.
Real danger is bat swarm attack, because it ignores both Quen and Fleet Footed. Create distance when he starts it, don't roll until it's half way or it will correct course and hit you.
Wait for when he crashes into ground. Don't get greedy, smack him twice and jump away. Rinse and repeat.
3rd stage:
Don't engage with blood copies, unless you deal enough damage to destroy them quickly. Dodge, stab heart, dodge again. Slow but safe.
Also, general tips:
You can open inventory and use potions in middle of fight.
Refreshment skill heals (at stage 3) 30% of health when consuming a potion, turning any potion into emergency healing item. You have plenty of otherwise useless potions that can be used this way.
When your toxicity is full, clear it with White Honey. You'll lose current buffs, but you'll be able to drink more potions.

As to the game. This fight requires tactic, not just smashing him like regular monster. Also his second phase requires tactic too.
You have spent a lot of hours on that fight as you said, so you probably learned what his moves do and how to react on them.
Now, to the part which makes fight easier:
Grandmaster Ursine armor - full set (armor, boots, gauntlets, trousers, silver and steel swords)
This set gives absurd amount of damage reduction against anything in the game, bosses included.
Protective Coating - Alchemy tree ability (talent). Adds 15% protection against attacks from the monster type the oil targets (vampire, in case of Dettlaff)
Griffin decoction - potion that raises resistances by 1% each time Geralt is hit during combat, up to a maximum of 25%. Lasts until the end of battle.
Quen sign - pretty self explainatory.
That way you can even enjoy games that would be otherwise impossible for you to clear.

I have downloaded mode and installed in to game folder.
Now this is where you all laugh - I recently had to buy a new keyboard and went for a
HK Gaming GK61 Mechanical Gaming Keyboard 60 Percent
The problem is I have no idea how to get the squiggly line to type to open console :(

If I am not mistaken, on US versions it's the key below escape.
Btw, that key is called a 'tilde'.
Do check if this is the one to open console, some mods also use other keys, like F2.
See, the bats have a "Target Lock", and this "Target Lock" has a "sound" when u hear it the bats are "locked On", thus when u dodge or roll, the bats compleatly miss.
PONTIFICATING: It should be possible, to complete the initial fight with Detleff, blindfolded, the moves are repetitive, the "sound Cues" are there, it takes 3 hits with a high powered Arrd, to start the cut scene, where he becomes the vampire.
I have considered attempting this, just cant seem to "get in the mood".
