Yrden: Greater slowdown or damage effect
Axii: Higher chance of success and faster casting time
Quen: More damage able to be absorbed.
You have to look in your character stats screen for the % and damage done.
Everyone has different numbers.

Long Answer: The sign intensity increases the effectiveness of your signs, in many diferent ways depending of the sign. Example:
Igni: Increase damage and chance of incineration.
Quen: Allows the shield to absorb more damage before breaking.
Yrden: Increases the field's duration and intensifies the slowdown effect on enemies
Axii: Reduces casting time and effect duration
Aard: Increases the chance to knockdown an enemy.
Thanks Stormrider and katzen for providing a worth while answer. I was looking to see how a vague word like intensity worked in this particular game.
Also the mention of where to look on your character stats for the numbers. Also useful.
