I like the combat better in Witcher3, but I've also always liked 3rd person better than first for fighting. Skyrim is more suited for 1st person combat and is kind of awkward at times in 3rd, it reminds of MMO's where you mostly just stand in front of enemies and swing your sword until they die then run around and cast a few spells.
The combat in Witcher is a lot more active and involved than Skyrim. In Skyrim you can pop a few potions, use a couple spells, and stand in place and tank hits from a dragon while you spam the same attack until you kill it. In Witcher you have to constantly evade attacks, parry, counter, dodge, use potions, use spells, use bombs, use arrows, remember enemies strengths and take advantage of their weaknesses every single time you fight. A few weaker enemies together are just as much a threat as the stronger ones. Even with all kinds of buffs if you were to stand still while fighting just one or two weaker enemies you'd die very quickly, that wouldn't happen in Skyrim.
Skyrim does do the skill system better than the Witcher 3 though in my opinion. Witcher 2's system was pretty good, but 3's is slow to level up and tries harder to lock you down to a certain style (combat/spells/alchemy). Skyrim lets you do whatever you want, the more you do it the better you get at it, has a lot more levels that you move through a lot faster meaning a lot more skills you can unlock and a lot more freedom in creating a character of your own.
I never actually finished the main quest line in Skyrim, despite having had played it for nearly 300 hours. There's a lot to do...and I mean a lot. I plan on getting it on PC once the Legendary hits 75%off so I can finish it with mods. It's definitely a good game and worth your time if you like RPG's.
I've got around 60 hours now in the Witcher3 and have no idea how far I am in it. I can tell you there's tons of ?'s on my map still, that I'm only level 26 yet already have some diagrams for equipment lvl40+. I've heard there's three Acts like there was in the last game, if that's true I've yet to see Act2.
Skyrim does a great job of letting you create your own unique character and experience.
Witcher does a great job of letting you experience Geralt's story.
Whichever game you pick expect to spend at least a hundred hours on it and probably never finish.
Witcher 3, so far, offers "what Dragon Age Inquisition should have been". It's world is very detailed and believable, but your interaction with it is far more quest/story driven, so in a way your interaction is limited vs skyrim's 'just do anything' mentality. But in exchange the writing and preformances are far better. Also, the combat mechanics are quite well thought out and action-y, compared to skyrim's awkward flailing.
Really, though, the order doesn't matter. One will suit your fancy more than the other, but both are worth your time. And skyrim with mods can easily compete with witcher for over-the-top visuals. Quite possibly it's prettier, if you're willing to put in the time and effort to make it so. And modding is a ton of fun.

Skyrim - 1279 hrs ( with 150+ mods), its was so different game from vanilla, was really fun thanks to Nexus mod community.
W3 - 379 hrs on the 2nd playthrough ( death march), but not gonna run the 3rd time until the new packs up. 2 times is enough.
Both are good.
Go run a marathon.
I am a little like you in that I have a hard time going back to older graphics right after playing a brand new gorgeous game, so do yourself a favor, experience ALL that Skyrim has to offer, and in a thousand hours come back to TW3. :D (TW3's not going anywhere...)
Neither is better than the other, that is literally impossible because they are different. Anyone who tells you that one is better, is giving you an opinion, which you need to take with a HEAPING pile of salt.
