It's on trees! You can find them pretty much anywhere. You will usually hear the buzzing of wild bees when you are close to one. Use Igni to kill the bees, wait for the honeycomb to drop, and collect it. But be careful, the bees do sting if you get too close.

Does it matter that I'm still early in the game? I've only played like 4 hours, and I really can't seem to find it anywhere

No, don't worry about it. The honeycombs are not really that important. They are a good source of income in the first area (White Orchard) when you sell them to the village witch. There may also be a quest connected to it (can't remember off the top of my head), but even if that is the case, the potential XP reward is not very high and thus nothing worth to stress out over.
If you REALLY want to find honey, I'd recommend travelling through the forests or swamps off the beaten paths, and you are bound to run into some eventually.
That being said, you can find it on every map (White Orchard, Velen, Novigrad, Skellige, Kaer Morhen). So if you really can't find any now, don't fret, you have chances to do so later.

In the west. Out in the swamp. There is a quest with a guy who lost something in a car. Out that way you will see them on the trees. They are everywhere tho. Mostly I found them in swamps.
Never cared much for them tho. Do not forget you can Igni animals in the town and get food from them.

I'm trying to use igni on the honeycomb in the formerly abandoned village near White Orchid, I keep getting a message that I cannot attack it.

There must be innocent ;) people then in your igni spray. Choose different angle of attack at honeycomb.

I found them useful source of income only indirectly. They're great food so I've to buy less of that which saves money.

Ok, there were peasants standing around, makes sense they would be in the line of fire. Thanks for the info.

I find them primarily by listening for the bee with headphones on and following the noise. Found about 40 this way. In certain environments there are many of them. It seems like the longer the hive burns the less honey will be in it, so I loot it as soon as it falls and often get 4.

I cant remember where. But theres a place run by dwarves where you find a basement ( its a contract ) with a locked in wild hunt hound. Theres beehives all over the place on the fields. Go nuts.
