Just read that article:
"It is possible to commandeer (steal is the better term) horses from other people, but you will not be able to take possession of them as long as your current Roach is alive. If your equine companion gets killed, you will be able to choose another one. You can also tame wild horses using the Axii sign, but it is not essential as there will be plenty of other horses to pick from."
This is a giant misunderstanding regarding Roach, she has never been able to die, wasn't programmed that way. The horses you commandeer from NPCs and the wild horses you can ride by using Axii, those are the "equine companions" that can be killed.
Not sure if Roach can actually take damage or not, every time I've left her in the middle of a group of monsters they just ignore her and run right towards me; even if she could though, it specifically says "Geralt gives every horse he owns the same name, Roach." There's nothing particularly special about this one, from what I can tell. Maybe we're supposed to figure she can die if we leave her there, and every time she does he just finds a new brown mare and renames her. It's just one of those magical things that isn't to be questioned in open world games, like how you can fast travel past a quest trigger without triggering it, but it still takes time to travel. Presumably you go through wormholes in the fabric of space and time, I guess... no need for Ciri to open them when there's one at every signpost.
Don't feel bad. You didn't misunderstand it at all. It was the writer who thought Roach could die; "as long as your current Roach is alive". It doesn't matter if Roach is standing right beside you, you can still mount another horse. However, the only horse that heeds your call (whistle), is Roach.
