You want to hunt monsters and demons? Try Monster Hunter or Nioh 2.
You want a story about someone trying to find a family member in a morally grey world full of prejudice, plagues and dark magic? Try Dishonored games.
You want a story rich fantasy RPG with a colourful cast of characters and an interesting world to explore? Try Baldur's Gate 3.
You want a story about a lone wandering warrior, forging his own path in a war-torn region? Try Ghost of Tsushima.
You want a game from the same developers, with similar level of writing, characterization and atmosphere, that also follows a story of a merc in a world with all shades of wrong? Try Cyberpunk 2077.
You can also check out Gothic 2, if you don't mind extremely dated graphics and controls, as I would call it, in some ways, an inspiration for Witcher video games. Also, you might want to check out the classics like Morrowind and Skyrim or Mass Effect and Dragon age.
And, of course, if you haven't already, I recommend checking out Witcher 1 and 2, as they are also really good games in their own ways.
Only Read Dead Redemption 2 comes close in attention to detail and storytelling/characters.
