There'll be some zones and monsters/enemies who may be higher level, but you can come later to best them.
At maxed skills, The White Wolf is a terrifying tour-de-force of mutant Nature, so he can and will kill at will, as an unstoppable demigod of beautiful brutal chaos.

Going for a alchemy decoction build is probably one of the most OP build in the entire game, especially later on. It will give you some crazy amount of health. The safest may be the Igni build, or something sign related, where you can just igni everyone with high enough sign intensity. Could be boring after a while though because it's making the game trivial. Focusing on swords is very fun too because of the kill-cams. Remember that you also respec in this game with a potion, so just have fun and try out something you're interested in or just sounds cool.
Make sure you have oils for your weapons. NG version of game will automatically apply the oil to the weapon.
For protection, improve your Quen, get better armor, dodge & roll away from harm, and get stronger weapons, oils and potions. Do not underestimate Aard and Axii, and Yrden is useful for temporarily trapping creatures, but your mainstay in combat will like be Igni. The gameplay wants you to learn all these tricks.
There are some spell mods, armor mods and weapon mods for Witcher3, try them out too for some more fun times!
protection? use Decoctions that heal you while using spell and Griffin set so can do double spell and get double heal
Signs are very busted right now, but they can get a bit boring - you just stand in your Yrden and insinerate/push your enemies till they stop being a problem.
That's why my favorite one is a sword caster build, quick attack skill tree with some aditional red skills for adrenaline, Aard + Quen combo for crowd control and survivability. Also Griffin School Technique from yellow skill tree, for additional energy recovery when wearing medium armor.
Pretty beginner friendly too.
There is a Magic Spells mod that add more spells to The White Wolf -- it'll change the default signs to different spells, based on whatever magic item (out of 25 magic items added by the mod) is equipped.
So Geralt can cast:
* a Yrden that creates an area of a poisonous fire on the ground, or spawns a tornado which chases a randomly-selected target, or summons a fire/ice/stone golem, or summons fire/ice meteors.
* a Quen that summons magical butterfliers, or unleashes a series of quickfire uninterupptable sword attacks on an enemy, or
* an Aard that unleashes a cone of magical flame, or creates sand pillars under the targets around, or
* an Axii that throws a fire grenade, or life drains an opponent while healing the Witcher, or shoots magical projectiles, or turns the sword into the Bow (and the bow can reflect projectiles or close-range attacks with a timely parry), or turns the sword into a Spear that can even parry projectiles, and allowing to use a shield to block attacks too.
* an Igni that turns the sword dual claws, or spews a stream of poisonous fire, or imbues the sword with blood flame that drains life and restores Witcher's health at critical attacks.

Best advice I've seen in a long while.
If you're a fan of the books.. why don't you go that route? Focus on the Cat/feline armor which is more tailored to sword-fighting.
Geralt in the books is more of a swordsman than anything.. he's pretty light on magic and alchemy.
See my first comment above with the linked video. It shows how terrifying Geralt becomes at higher levels, with his agility, Sword and Igni skills amped to the max.
