(edit) at the start of the game you won´t have the gear and skills to make ANY build so just use what you think looks cool and has any bonus you think is good at the time
I´m currently using light armor for the light attack bonus from the general skill+feline bonus armour to melee, but I´m not using the feline swords because I have a high crit rate so a pair of random sword with 75% bonus to crits do more damage in the end.
Though I could easily make a couple of skill swaps and use heavy or light instead.
Andbombs ,potions and signs are still a big part of my gameplay even if I haven´t hugely invested in them.
even on deathmarch you will with a good chunk of game left reach a point where you can do whatever you want as long as you put some thought into synergy of skills.
I was clearing camps of red skull (lvl 35) knights when I was about lvl 20.
I didn't change a single item from my equipment since very start of NG+ (I have cat school armor and unique non-witcher swords)
fights have become very high staked. I deal great deal of damage while enemies do too, all that matters is how I adapt to every battle and it all that matters
I didn't play game on not NG+ for years so idk but armor probably matters on these levels. since combat rebalance sign skill tree have become very potent in any stage of the game not just early levels. so now after the update, medium and light armor are quite good if you follow any skill build but for heavy armor I can't really tell. there used to be tank build based on having heavy armor, some alchemy skills and improved quen sign which allowed to tank a lot of damage and have that damage reflected back to enemies but I think this update botched that build a lot (I read some skills that have changed which hinted that build got nerfed)
But it completly depends on your build. If you have a sign build you will wear Griffin Armor. You decided that by going for the signs.
I am playing New Game + with an Euphoria Build on Death Match that lets me one shot most enemies and bosses are like a few light attacks or one fully charged heavy attack, while having very decent defense. I didn't die fighting once as Geralt and I am already after the Wild Hunt Attack on Kaer Morhan.

So no "best" OP, you must choose.
I'd say late game it depends way more on your build as sets can elevate a good build to a great build.
Early game I always went with what I found to look the best, even on higher dificulties.
40% piercing resist
30% bludgeoning resist
100% bleeding resist
40% slashing resist
25% monster resist
and with 3 sockets.
