The only sidequests I suggest doing right away are the mutagen upgrade and grandmaster gear quests. The rest you can do whenever.
Other than that, there are pretty cool side quests, so I would suggest you do them all before you even progress much into the main story. The tournament/Guillhaume quest was cool, the small errands in the city like Paperchase, Reginald's statue, Portrait of a Witcher were super funny to do and don't require high level. There was an escort chain you get from the first notice board, that one was cool as well. Wine wars is a bit more spread-out but that should give you plenty of travel points for later. Lebioda's statue quest is also spread-out but interesting and gives you the best views from the zone.
You get pretty good gold from the Knight for hire chain, which is appreciated as everything costs a lot.
Just go through all of them, especially if you're playing for the first time. The people in Toussaint are quite funny, so the quests are very easy-going, unlike in Velen where everyone is miserable. The zone is absolutely stunning, so you'll enjoy exploration quite a bit.
