That's not the "third way". That's the second way to complete the quest.
There are only two endings to this quest In one, Geralt does what what Annabelle wants him to do, which is bringing her bones to Graham so that he'll bury them. Afterwards, back at the tower, she'll kill him while Geralt's back is turned. That's ending #1.
If you disagree to that, she'll then turn into a Pesta when you try to leave the tower, forcing you to try an alternate method to removing the curse. That alternate method is convincing Graham to return to the tower and tell Annabelle the full story of what happened. If he does that, he'll kiss her and die in the process, and her spirit will pass on shortly afterwards due to the curse being lifted because of their love for each other. That's ending #2.
There you go; 2 ways to complete the quest. ONLY two ways, and Graham dies in both. The only difference between the two is whether or not Annabelle remains a Pesta.

I'm not sure what you expect from a "SIDE" quest. Side-quests are not going to be full-blown stories if that's what you're expecting. It's extremely good for a side quest.
