If you feel like infinite stamina for dodging, rolling, attacking and blocking is BS, you could try some mods that lower signs stamina consumption but add stamina use for all fighting aspects, it gives the game a Dark Souls vibe. The difficulty that comes from that can offer some form of "epicness".
If you don't like Geralts move set, you can get animation mods that make him faster or slower or completely change fighting and/or dodging animations. You can get mods that make him more or less a ballerina, essentially.
If you feel that crossbows, signs, potions, abilities aren't spectacular, you could precisely change those or go for big overhauls like Ghost Mode or Enhanced Edition.
I played a lot with Ghost Mode, you can change many settings to create a custom difficulty and I liked the idea of stamina being a constant worry, it made a lot of fights deadlier but slower as well. It does change a lot, I wouldn't reccomend it for a first playthrough. A combination of stamina mods, animations mods and maybe some changes to abilities might be a less extreme way of changing the game.
