If you like the idea of automatic health regen, I'd recommend looking into the yellow ability called... I think it's Gourmet? It lengthens food regen to something ridiculous, like 10 minutes, and makes it so that with pretty sparse re-application of food buffs you basically regenerate all the time.
it's do-able but you're going to struggle.
what i would do: just take it on the chin, load a previous save, head elsewhere, level up, rebuild the stack of items, upgrade the armor, try it again later.
You can try cheesing the combat by playing super safe. Basically only engage your enemy when you have quen on so in theory you will never take damage if done properly. Regardless you need to improve your combat skill or grind levels.
Early game. I think the yellow skill that makes food heal for 20 mins is very useful. You should have taken that.
He probably didn't know and the perk is quite abusive in the early game too. Game becomes so much easier with that perk.

i now realized i should have prepared better but it would be nice if the developers left some food or something close by to help, especially on the easiest level
I don't wanna judge or anything, I'm just curious. How can you end up with NOTHING to eat? My stash is filled with at least 30 Fresh Water, same amount for Meat and lots of small stuff just from looting. And just as a Tip: Loot everything, not only chests and crates. Also barrels, sacks and those other packages you can find. Food has 0 weight afaik, or at least not much ^^
But yeah, be better prepared.
