Yeah, you could do this, but they also take up some weight. Weight usually not a problem for me since I will stop at merchants and blacksmiths etc and sell excess armor, weapons, pelts. But for someone who doesn't like to stop or likes to hoard, it may be a minor problem.
There is a mod over at Nexus that will allow you to sell quest items, but it may be a little buggy and you certainly wouldn't want to sell a quest item if you have yet to complete that quest.
I would just put them in my stash lol

The mod you're talking about comes in two versions. The first version only allows you to store the items, while the second version allows you to buy and sell the items.
you cant sell all of them. If you have a quest that has multiple quest items to chose from for example and you dont take the wrong items first then those will forever stay in your inventory. Sometimes you have mutliple items to open a secret door or portal. If you use the right one immediately the wrong ones will stay in your inventory forever. Thats what he is talking about.
