There are not many sidequests, of the top of my head i can remember of 3 or maybe 4 sidequest that are timed sensitive in act 1.
So don't worry too much about the sidequests given by random nobodies in the game, they are just filler content, but the ones given by significant characters to the main story should be done as soon as you are able.
edit: i will give you a small warning about a sidequest involving Lambert though, you will likely get to do this sidequest fairly early in the game, and towards the end it will tell you to go to skellige, you do not need to rush to skellige to do it, you can follow the main story (which will take you to skellige eventually) and then you can do his quest.
Thank you for the thoughtful response. This may be a dumb question, but I am assuming "important" characters are always obvious even at first meeting?
It took me 10 hours to get through the Prologue, so this is going to be a long time I guess.
just do whatever sidequest the characters you meet in the main story give you and you should be good. the only exception to this is Lambert, you will not meet Lambert by following the main story, but you'll likely stumble upon him if you are diligently doing witcher contracts.
edit: just to clarify the lambert issue, he will show up later in the story, what i mean is that his sidequest will not be presented to you by following the main story, you'll meet him by stumbling upon him with witcher contract.
edit2 if you are not too picky about spoilers you can google to figure it out exactly which quests are time sensitive and what are the triggers in the story for them to become unavailable, they are very few, the majority can be done at your leisure, but the ones that are time sensitive have an impact on the ending so you really don't want to miss them if you can.
