For example, there are NO levels to gain in EE. Levels are removed entirely. In this case you are fighting a noon wraith. Since there are no levels, that encounter is just as difficult (or easy) as it would be at the very end of the story. Propably on the difficult side as you do not have many skill points if any.
Also, you need stamina for everything. If you are out of stamina you cannot perform any attacks, dodges, etc.

In case of EE, it's the no-levels thing for me.
Always felt that for an "established legendary" protagonist like Geralt a leveling system doesn't feel quite right. Ideally I would like that all "character progression" would come from the gear Geralt uses, but that I think isn't possible even with modding. EE doesn't level up per say, you earn skill points by using said skills eg. fast attacks gain you fast attacks points and so forth.
EE also levels out (pun intended) the open world. You will no longer face nekkers that are stronger than ekimmaras or run into a pack of wild dogs that die in one hit right after you ran away from a different pack of wild dogs that had godlike stats. Nekkers are nekkers, dogs are dogs, ekimmaras are ekimmaras.
