Holding one slows you down and its going to be ripped to shreds completely after a few blows. If you can hold it for that long anyway, which I doubt since almost every monster is stronger than you on a physical level.
Witchers're trained to dodge and parry rather than block. They use their reflexes and they move quickly - tanking with a shield ain't their fighting style.
But if you still want to use shield there seems to be a mod on nexus
It likely depends on the Witcher school and what they teach.
For example the School of the Cat is all about Reflexes and quick action, Which is why they wear light armor. They don't intend on getting hit and plan in dodging/parry to avoid being struck.
Then you have the school of the Griffen. Who depends more on using Spells as shields, Like Quen. Not to mention the armor itself looks like it's intended to take some light blows incase the spell shield breaks.
But then you have the School of the Bear which obviously look like their teachings revolve around tanking blows and dealing with damage as much as dishing it out. With their armor, It doesn't support the whole dodging/rolling/parrymaneuvers of say, The school of the cat.
So the Cat school might not rely on a shield for anything, But the Griffen school, And especially the Bear school give off the impression their fighting styles could Utilize a specific shield made to withstand the blows of Monsters. And with the strength of a witcher as well as reflexes, They can likely utilize a shield effective against monsters, Drowners, Rotfiends, Lower monsters, Humanoid.
They still drop Dragon Scales was my main point.
And your original statement about witchers not wanting to slay dragons because they're seen as intelligent sentient creatures has little value, Since as we see, Geralt has no issue slaying Monsters with an above-average level of intelligence to get what he needs. And Dragons aren't the only ones with body parts strong enough to withstand blows from other monsters.
