How on Earth I offended Cooper's Guild?

After completing the main quest for Blood and Wine, I came across posters that warn merchants to forfeit all discounts and such due to wronging the merchants' guild. Any idea how I got that?

Yes, you chose to spare the silver basilisk which offends the merchant's guild as they paid the reavers to kill her. You'll also find such posters at Armourers and blacksmiths/swordsmiths and will have to pay more for your goods. However you have pleased the herbalist/alchemists so will find posters from tham praising you and will get a reduction from them (supposedly) if you ever need to buy anything from them.

I can't say I've ever noticed any real difference in prices but by that point in the game I generally don't need to buy anything and am rolling in money.

Guess the next game+, I just avoid the quest or kill the basillsk and anger all the herbalists and alchemists in Toussaint...

Welp... I felt mine. I had over 35k crowns, bought supplies needed for the Grandmaster Wolven gear set then I had under 5k crowns... Oh well. Nothing can be perfect, can't please everyone.
