When are Triss/Yen romance options locked?
I wanna go as far as possible into the main story, doing every possible quest, but leaving the romance for the absolute last moment.
When are either romance truly locked? How far can I go without triggering "It Takes Three to Tango"?

With Yen romance options lock during quest "Ugly Baby". With Triss during "The Isle of Mists". If by any or both of this quest you didn't romanced the respective then no more chances or availability.

"It takes three to tango" only trigger if you say both Yen and Triss "I love you". Sex doesn't matter, just don't sign up for compromise with both at the same time.

You mean avoid kissing altogether, or just the obvious love choice in "Last Wish" and "Now or Never"?

Obvious choice.
