I'm always exhausted at the end...
Play intuitively, use the mouse as your own hand, and... reload. Call it "reconnaissance"...
There are places you can balk to regain stamina, like bridges, but you can actually turn Roach sideways to stop others passing while you regain stamina.
The last remotely tough one is Palomino, because none are long enough on Skellige to worry about stamina.
OP, I have had similar issues because, to me, Roach seems unwieldly at time due to not controlling like a car with which you race in most games. Often times, he will turn the opposite direction because he's trying to follow the road even during a race (at least for me). Its not an uncommon complaint but its not gonna get better so take some time to get use to it.
