Geralt simply sensed it, i reckon between his body language, behavior, and the school of the cats reputation of hired assassins. They're just about all "unstable".
He is not wrong either, Gaetan had done it before, multiple times. To what extent, and if he just wiped entire villages each time, nobody knows.
On the topic of info - you don't really get anything on him before the quest and talk, but if you spare him he'll lead Geralt to his hideout, where you can find a letter which says Cat School is overtaken by soldiers and that there are bounties on Gaetan and another Cat witcher, with two more already dead.
I still am really curious though if he was the one mentioned in the cat diaries while hunting for witcher cat gear.
I think I am going to spare him this time. They are going to die soon anyways. Plus with regards to what BuzzardBee just said It's not his fault he became this way.
