You win only one gwent card per NPC?

I'm not talking about the unique cards, but the random cards you get from playing innkeepers and merchants - do you only get 1 card from them, or can I keep playing that same NPC over and over to get more?

Each one gives you a card, you get one card upon beating them and that's it. Any matches with them afterwards is just for the bet reward

Crafting materials? Are they good crafting materials? Like meteorite ores and such?

^^^ but technically not first time you play but first time you win ;) if you keep losing against them you'll still get card on your first win so keep trying. once you win all available random vendor cards you only get materials even on first win.
