What do you guys usually do with junk items ?
Do you usually dismantle them, or just sell ? :D what's better ?

I'll sell it if i happen to be near a merchant that buys it, if not, just drop it.

I collect it all, and then every 100 hours or so I put all the junk in a big box and FedEx it to the sole survivor in Fallout 4. He can use it to make stuff.

Or I sell it.....

Edit: Don't sell any seashells. If you break the seashells down at a blacksmith or weaponsmith you get a pearl

which discusses how to make GM gear less expensively, might be a good resource for knowing what's probably worth dismantling. In particular, you want anything that'll let you make enriched dimeritium.

It also, amusingly, notes that you can make cured draconid leather from bears and endregas (hardened leather from bear hides, chitinous shells from endrega armor plates).

I just dump them to stash. Selling looted weapons and armor especially from smuggler caches generates more than enough income already.
