Witcher lore; Cat school
So, anybody know why most of the witcher in cat school turn into hired assassin?
And why does the witcher school stop training new witcher? There are plenty of monsters and the common folk seems like always being trouble about the monsters.

Almost every witcher eventually turns into a hired assasin (even Geralt does it in TW1-TW2). Cat school's reputation is ruined, that's all.
Witcher schools stopped their training because the schools have been destroyed by fair competition. The Curch of Eternal Flame has won.
It's not as simple as just mob rule.
With lowering monsters population witcher schools looked as anclaves that presented a threat of spawning more and more superb assasins that will eventually (the more likely the less monsters are left) take contracts from neighbouring kingdoms. They can't be controlled because they think of themselves as very self sufficient organizations.
On the other hand, a fierce religious church provides all the instruments to control the social environment, is very dependant on the will of the ruling class, and they are simply humans after all.
Coincidence of interests resulted in devastating witcher schools all over the continent, and in time orders of Eternal Fire took the role of defenders of humanity against monsters (and nonhumans) as we see in the games.

This is a fair competition. Just as in real life.

well wasnt it that monster populations dwindling and hence witcher population too it's no longer socially acceptable to subject boys to 'genetic' engineering :P

There are far more monsters in the game than in the witcher books. For example, in one of the short stories, Geralt tries to ask around if there is a bounty on a local forktail, and is told that its such a novelty that the nobility (a princess, IIRC) doesn't want it killed.

There still are monsters, but they are in decline. After the Conjunction of the Spheres, monsters were so prevelant that the human settlements were essentially besieged by them; peseants needed armed guards present just to work the fields. Witchers were developed as a solution to that problem. With the decline of monsters, witchers were not needed as much and can be seen as troublesome archaic relics by a populace that considers them to be useful tools at best. Riots and pogroms against them (as it Kaer Morhen) lowered their population further, and, at least with respect to the Wolf School, killed the mages that ran the mutations.

If you believe in the game lore, it seems well possible for more witchers to be created, so long as there was a willing mage and the necessary mutagens. The Yennifer sequence at Kaer Morhen establishes that pretty strongly.

I don't believe that the School of the Cat is in anything but W3 (made up by devs, like the school of the Viper). So the lore we know is the lore from the game.

So, in the end, the witcher will cease to exist, and the populace will get rekt by the monsters, and they will ask for a solution, and a new witcher school will open again.
What a vicious cycle of idiotisy.
Or maybe just a plot to make the witchers more rare and elite men.
Like the Jedi and Sith.

Geralt's discussions with 'monsters' and others in those short stories about this're one reason why I enjoyed those first two books. Like who's dying breed etc.

In my opinion, people are being jackass due to the fact that witcher is much more cool and awesome and they are dependent on them.
Take a look at the movie Pacific Rim. Same case, where they divide the effort to a more affordable terms for the rich and powerful.

If the witcher school is more control by the individual goverment, like the Gray Warden from Dragon Age, i think they will still be appreciated.
