Yes, it is only really usable during big fights. This is why for routine fights, as pointed out by Muktar, you should first let the enemy close on and get tied down in position by your fronty line, then have Aloth disable them with spells like slicken, blind, mind miasma (v. good) and confusion (even better). This is enough to give you trhe upper hand and prevent Aloth being attacked much in routine encounters.
According to 1.05 patch notes Fan of Flames is being nerfed by 25% but Ghost Blades, which is currently vastly inferior, is being made Foe AoE only which will open up new tactical opportunities for Aloth early game since he will now be able to nestle in behind Eder on the front line and blast the enemy with it from there I suspect.
This is currently true but the upcoming patch is supposed to let you respec your party members. All of mine may get respecced but Aloth (or maybe Grieving Mother) will be the first.
As others have said, Arcane Veil is helpful and keeping Aloth against a wall when necessary (and available) can help with teleporting enemies. Chanters can give passive buffs to defenses.
This can be especially helpful if both Kana and Aloth are back row characters for your party.

In addition to Withdraw, Priests have Consecrated Ground (which I use in tougher fights). Holy Power also increases Resolve (which increases deflection). I use Iconic Projection a lot. It damages enemies and heals allies in its path. The Druid's Moonwell is very good (and scrolls can be crafted or purchased so other party members can use them). Scrolls of Defense can also help bc they are readily available (and can be crafted) and only require a lore of 4 or 2 to use so many party members can potentially have them.

You can respec your companions stat's. This doesn't add extra and doesn't break achievements
