Nope, Vessels aren't undead. But most undead are vessels.
Any object which carries/holds a soul by animancy is a vessel (Animats, Wichts, Skeletons, Guls, Fampyres etc.). Undeads like Shades aren't vessels but spirits (they are souls, not carrying a soul).
Another example for a special type of vessel: Some speaking statues you meet in the game.
Kith are btw members of the civilized races (human, aumaua, dwarf, elf, orlan, godlike), except those undead vessels. Uncivilized but intelligent races are wilders (e.g. ogres and vithrack). And don't ask how a weapon distinguishes between civilized and uncivilized races ;)
