I wouldn't build a main around what armor I'd wear. IMO it's better to choose the armor (clothing, heavy in general but sometimes medium) for each battle. (Scout ahead.) It's one of the benefits of this new system. Each member can be more tanky or more damagey in any given encounter and armor helps. Heavyish armor for lots of DR and light/enchanted clothing armor for the attack speed.
I would lean toward your second build but you might want to split the difference. Or take either depending on whether you'll be tanking more or staying out of the fray most of the time. Or dump a point or a few of CON and add it to resolve. (IME higher deflection seems more important than higher CON for a druid. HOwever, I think playstyles may affect that.)
I've only used a bear and a wolf as my spiritshape so can't comment on a cat. PPl who have used it seem to like it.

a balance of both, will be more beneficial from the DEX bonus in comparison to the 1st build
a little less fragile, a little bit faster, its something in between the 1st and the 2nd build

That looks good to me. I hope others comment as well. It would be good to get the opinions of a few ppl who've played druids.

Why not? Faster casting is always helpful...
I use regular weapons a lot so I need the points in dex. It also helps with casting speed. It really depends on what you want to do with your druid. Why are you choosing con over dex?
Why might over intellect? (I have both very high FWIW.)
the lower then half-second attack speed increase isnt noticeable enough for me.
I chose to became an offtank caster which right now actually works GREAT, i can take alot of hits, i cant cast alot anyway because of the limited druid spell usages but when i cast spells they hit HARD.
Furthermore, i took the sword & shield style talent and i have tons of reflexes and defences because of this talent. ((giving me more deflection from shields and converting all of the deflection to reflexes (without removing the given deflection), its rediciously OP right now i think the dev team might nerf it soon.))
