How to level up more or grind?
I have gotten my Stronghold already and trying to get to Defiance Bay. On my way there I encountered some Drakes and Xunips, those monkeys tribe monsters, and I beated them with a a couple reloads when I realized that those monkey priests were healing the drakes.

Atfer kill them I found a Cave with a Dragon Boss, Cail the Silent, I believe his name was. Well atfer many reloads I killed him and now I am stuck on the next place right before Defaince bay. I would load into the map and Face 2 Drakes and a couple Monkey champoins with some priests. I tried and tried and kept dying no matter what. There were not terrain exploits on that map since it was an open field, the drakes would aggro my ranged fighters and kill them.

Atfer that I decided to try to map out the world instead but when I went to Stone rigde or what not I encounter some Feral Druids who wrecked my whole team in seconds with thier spells...... What should I do to grind more xp?

Do quests
What Nyaru said - there is no grinding in this game, a vast majority of your XP is going to come from completing quests. You get small amounts for adding to a bestiary entry (done by killing something that still has an incomplete entry) as well as opening locks or disabling traps, but they're a pittance compared to what you'll get from quests.

I'm having a hard time finding quests.. i did the side quests in Gilded Vale, and every other region i go into is hard as hell to survive..

Launch origin -> buy dai -> play it.

As long as you stay on the west side of your stronghold, nothing should be too much of a challenge. There is more than enough xp on that side to overlevel the next content.

the endless paths are a good way of earning some extra cash and some rather strong items aswell..and in some places tons of exp. but tbh. i don`t think your issue is grinding, when you look at mechanics and stats in this game: tactics > grinding. if your having aggro problems you should try looking at the whole engagement-system again (closer), if done right your ranged chars won`t ever get attacked (unless some aoe).
not tryin to be snarky, i had similiar issues at first (coming from IWD, BG), but now i can tell you the amount of complexity and tactics this game offers owns old D&D hard and you could probably even kill some of the later enemies with lvl 1-2, simply by applyin said mechanics right.

I don't think its mechanics at this point. I just get rekted really hard at that one junction. I stormed Raedics Castle and that didn't really hurt me. I am playing on hard also. I just need some form of fire proof armour since those AOE fireblasts from those drakes really really hurt. And how do I counter frighten?

after stronghold go straight to defiance bay where quests are mainly lvl4-lvl5, then you can go back to expore the wilderness
