Yeah they're extremely rare. I'm not sure about most of what op is talking about or what could be causing the problems.
For the manual save issue, maybe op should try running as administrator? I recently read a forum post where that solved game issues for someone. Dunno about the rest.
most of us played on the last patch from like 2017 or something. you can find the old patch in the games beta tabs in the library properties
There is also an experimental beta patch, so it could be that. Or, if something got corrupted verifying the game files could help.
For the bugs I've run into they are mostly minor, like not starting with some of the backer items (space pig and ring of gaun), DR reduction from weapons not applying properly sometimes, occasionally having party members spawn in weird positions after loading a game or zone transitions.
There are a number of ways you can temporarily get stuck in combat, most of them are waiting for some kind of status effect to time out, but are occasionally from an enemy resetting aggro or generally being dumb.
Sleeping at Gilded Vale, after talking to Urgeat, is one of the triggers for continuing the quest The Gilded Vale. That's not a bug, but the quest design might not be to your liking. Pretty sure that isn't the only way to complete the quest, but I've never tried others.

This year the game has had a Unity engine upgrade that caused regression and new bugs, some of which have not been fixed yet. So, while the current release may not be as stable as the last good version from 2017, I recommend you visit Steam's beta subscription channel for this game where to downgrade to the last stable "legacy" version of the game from Dec 2017.
The most common bugs I've experienced have to do with audio though, and the audio cutting out when there's a lot going on like spells + gunfire, and/or a sound effect not ending when it should. Nothing on the scale of what OP claims.
Kind of the end of the era of cRPGs that didn't require the community to step in and improve them for years and years... which is the new normal.
