Pause, select that character. Does any enemy's footdisk change?
For each of your characters, you can tell exactly which enemy he's targeting, if any.
(This also works in reverse. Click any enemy, and you can see which friendly it's targeting.)
IIRC, targeting a spell or ability is distinct from targeting for weapon attack.
After your spell executes, manually click an enemy to resume targeting it with your weapon.

I never noticed this behavior because I pause-and-micro every targeting decision, anyways.
I do. But whenver, I cast a spell and the enemy still there it just sits there. I didn't notice. Just the "..." instead of sword symbol. Just resuming the regular range attack of the wand. I'll just the range. Thanks for the tip.
The AI tactics won't change but specifically their targeting will default back to "Defend Self". Thus making them just stand there until they get hit. So make sure to double check all your characters behaviors in your party.
Oh also if you set them to Defensive they won't attack or move unless the enemies are in range/relative proximity to them. So generally better to flip them on Aggressive.
All this unless of course you simply clicked on or hit the hotkey for the little toggle button in the bottom that disables their AI.
I ddin't add or remove (at least think I didn't)
What is the default settings, so I know what to do? I'll have to try to find where AI settings are.

Finally, summons inherit the AI setting, i.e. if it's disabled, AI is off for them, and you need to turn it on if you don't want to command summons yourself.
