You may look up the enemies within the Pillars of Eternity Wiki and learn about their defenses, immunities, weaknesses and other details.
Keep in mind that the entire game on PotD mode can be completed by single characters.
Food and drugs can be as helpful as inn resting bonuses and Survival skill based "vs Beast" bonuses. Some players like using scrolls and potions. Others prefer ordinary afflictions as to disable enemies. Summons are a good idea, and the Chanter class is the best summoner in this game. Summoning figurines as an extra. Sagani isn't so helpful versus dragons in my opinion - other players may disagree. Some players don't explore the multitude of priest spells and only use priests as healers. You may need to explore your party's potential some more.
One way, that I like to go, is to paralyse, confuse or charm some of the enemies and concentrate on one foe then. Raising your accuracy and lowering the opponents might be useful too.
