The simplest way I can imagine is to just mute brawlhalla on your surroundsound out in your sound settings. You could probably even set up an event to do this when brawlhallla starts up.
On the hardware side, you could also just throw in a simple toggle switch on your surround sound out if that would trigger the upmixing on your receiver.
On that note, is there no way to manually set your receiver to upmix?
