It’s not the end of the world.
Their newer UbiSoft Connect "native" games usually only require logging in once and then will remember the login.
Is it the same with AC Syndicate?
. open setting.yml in note
. scroll down and find :
offline : false
change to
offline : true
make sure you close your game before doing this
restart your game

If you happen to close the Ubi$oft Connect between game launches but keep your OS open in that mid time it is only logical that Ubi' Con may ask you for another log in.
Will I be able to play online then?
I don't get it :D what do you mean by that? I'm just launching the game through steam OS on my Steam deck, like every other game.
If you close Ubi' Con while still keeping your Steam Deck's Operating System (OS) open from between it's only logical that Ubi' Con asks you to log in again (because any program can't usualy recognize if it was open previously upon that same OS session.
And while you're at it, may I also suggest you to try out Proton[github.com] because I've always heard folks speaking very well about it since it tends to heavilly reduce incompatibillites between your Steam Deck and Ubi' Con to properly work / launch the Ubi$oft's games upon that OS.
On steam OS, you don't start Ubisoft Connect separately and you always use proton. You can't start most of the games without proton because they're windows limited.
What I'm trying to say is that I can't close Ubisoft Connect because I never actively start it. It starts automatically in the background every time I start AC Unity or any other game that requires UC.
My problem is AC Unity is the only game that asks for the password every time I start the game. Any other Ubisoft game I own, doesn't have that problem (for example Far Cry 5 or AC Syndicate).
No, you will play in offline mode, but in this case, you don`t need to log in everytime you open the game, if you want play online, change again "offline : false", shortly you just need to log in if you want play multiplayer/online mode
