I agree that this type of quest - when you just have to fetch items on the ground - are not exciting at all (there are others: spider eggs, rust flowers, frogs in Portland and Inselburg, one in Bear Butt, boom mushrooms in Sandy Island, etc. Maybe you should have to fight a relatively powerful army to get them or accomplish yet another side quest and get them as a reward. Example: for the mentioned death cap quest you might have to go to the hunter cabin in Aralan and he would say he would give you the caps if you kill a certain spirit of the forest that has been disarming his traps.
Similar to the quest where you have to collect the eggs/roots for the ritual that the blind mage gives you. The monster spawn on aralan and they all holding an egg/root each,
Its definitely doable and way easier to locate a moving monster.
This would give you the dots that normally exist in normal and easy difficulties
