The log files are simply text files were the game outputs messages about what's going on behind the scenes, including error messages when a mod goes wrong. You can open them in any text editor.
Your problem is most likely caused because one of the mods you're using is broken, or is interfering with another mod you're using in such a way that they break each other. So the solution is to figure out which mod that is, and turn it off.
Error messages in Log files may help you figure out which mod is causing the problem, but if you don't understand what they're saying don't worry about them. Just turn your mods off one at a time until you find the problem by process of elimination.
