Hell, the new crisis mechanic makes sure they can't even get ahead either by wiping out most (if not all) progression differences between you and the NPCs.
If you found VI too difficult, rest assured that VII will be even easier -- and they're only gonna keep getting easier the longer Take-Two Interactive owns it. Skill is not a requirement here anymore.
But yeah, definitely don't play an online game if you're wanting to avoid a challenge. PvPers are not scripts. (Well, most aren't.)
Going by their previous track record, I wouldn't have too high of hopes for that. All of the Civ games that have had multi-player have had pretty garbage networking code. I'm not sure there was ever a high point in the series.
I guess that isn't necessarily addressing your specific case of getting games started, but rather the act of trying to keep them going once started.
This will also help you avoid some of the, uh... more special people, shall we say, that tend to frequent the rando queues.

You can go on CPL discord and join 1 beginner game. We are really kind with newcomers :) it’s very easy and plenty of people will help you if you ask
They're long. Multiplayer matches are typically played on the fastest game speed (half cost to build or research everything), with simultaneous turns and turn timers to keep things moving, and they still take several hours to finish a full game. There are some multiplayer scenarios available which are designed to be shorter, but I don't know how much people play them.
Most played formats are 8 players ffa, 3v3 teamer and 4v4 teamer. Most of the games lasts between 2 and 6 hours, depending on the concede rules. Longest game I have seen was almost 7h long.
