In prince AI's got +8% science/culture/faith, +20% gold/production, +10% combat xp and 1 free tech boost at the begining of the game.
You could try Warlord, but at warlord difficulty, AI's got a tiny combat malus and the player's got +15% combat xp. ^^
I don't remember if it is so different from civ V (it's been many years I haven't play civ V) but maybe you're just a better player because of your Civ V experience. The game are differents, and a really different gameplay experience, nethertheless, some features are the same and you're not a rookie anymore :)
I recommand playing at Immortal difficulty level to an average game experience. If you want a challenging experience, Deity can be a good challenge. the third starting settler can really give better tempo to the AIs and you can eventualy lose. If you prefer un chill game or a game where you can test some BOs or stategies, Emperor is a decent level imho. AIs can be agressive (and even dangerous) early game but you can't really lose if you know how to play.
This was the same at least in Civ5 and Civ4. Most likely also before that. It's been rather constant in the Civ series: Prince is where the player has no advantage nor disadvantage over the AI.

But in Civ V, yes it was the case, prince = no bonus/malus toward the player. :)

I went ahead and re-checked the XML files responsible for this, including the ones coming with Rise&Fall and Gathering Storm.
The expansions do not change this. And the base value is still 0. It does +8 per level up for science. Similar entries can be found for the other yields.
TL;DR: on Prince there are no bonuses or maluses for either AI or Player.
They use corps on Prince too. To be honest, I think the problem is what grognardgary mentioned up above: There are simply too many features in the game and the AI is not programmed to use even half of them. Even in one of the official match modifiers ('Monopolies and Corporations'), the AI is not programmed to take advantage of the new features brought by this mod - either by glitch/bug or they were never programmed to in the first place. You have to download a workshop mod for the AI to use the features in this official match mod.
For whatever reason, the AI is also hesitate to use more advanced government types. I don't think I've ever seen an AI adopt Fascism, Communism, Democracy, etc. This leaves them at another big disadvantage compared to the player. There are numerous other problems like this in the game. The AI players are playing with a handicap constantly unless you play on a "cheating" difficultly level, which just seems like an excuse for poor AI coding on the developer's part.
I'm kinda disappointed tbh. I've been playing this series since Civ 3 and Civ 6 is the only Civ I didn't buy upon release because it looked like a step backward from Civ 5. I finally took the plunge ("hey, after nearly 6 years they must've made it good, right?") and I feel like I should've just stuck with my original gut instinct. If I were eligible for a refund I probably would take it.

It's the same in almost any other games. And for Civ it's the case since Civ 1. The devs had to find compromise between AI's intelligence and playability. A more advanced AI would be better but the game wouldn't run in casual computers. That's why they compensate this with Ai getting more bonuses in advance difficulty levels. I think it's fine. Like I said before, Immortal is a good compromise. Or Deity if you like more challenge.
But the real essence of the game is multiplayer. Why bother with an AI you don't like when you can face human players ? I was like you at first. I bought the game in 2016, made two games and stopped playing it during three years. Too cartoon, too easy (at king level), few features...
I gave it another chance one year ago with the full bundle release, increasing difficulty and starting multiplayer. Oh man. I wish I did it before. I play civilization since Civ 1 (yeah, I'm old) and this one is by far the better I've ever played. So many features, so many strategies, so many things to master. Hope you'll manage to like it :) And if not well... there's so many games to play nowadays ^^
