This is my experience too --- except for Civ 4
However, that was because of a mod with unique rules that made civilizations literally rise and fall due to instability if the civilization was ruled incorrectly.
Is this mod (Rhye's and Fall of Civilization Mod, and RFC Dawn of Civilization mod-mod) the only one to solve that problem in all 4x games? Probably not, but it's the only one I know of, but it's only for Civ 4.

warlords: ai surrenders once you reach an unbeatable power factor over their combined resources.
alpha centauri: vote supreme leader is a free win with minor restrictions. If you have not been using {bio/chem/nuke/mass murder} tactics against a survivor and have vastly more power than everyone else, you can effectively vote yourself to be the winner. If you used evil tactics, the AI can demand you fight to the bitter end.
Heroes 3 & 4 had some sort of I win ender as well but I am drawing a blank.
That depends on your skills and the kind of experience you're looking for. I recommend to start on Prince and go up one difficulty into you find one that you feel comfortable playing. I like to play on deity when I'm going for a domination victory, where combat is more challenging, and on immortal for other victories, since I don't feel like Deity is any harder for other victories, just more annoying and limited. I played Emperor for a long time, which a difficult I feel is the most balanced, but it was getting too easy for me.
I've only ever played Civilization 5 and 6, what other 4x games would you recommend? I was thinking about trying Endless Legend.
The game is also not going to force you to try different things or have fun, you have to sort of embrace and roleplay with the leader you chose and look forward to the win in the way you can have the most fun.
If you're playing by constructing whichever building/unit/tech is recommended, then that's not the point. I also believe you have to be interested in History to enjoy a game like this, I'm always checking the Civilopedia to see what is it that I'm about to build!
The game has it's flaws of course, until now I still can't overcome the fact that the game looks like a kids mobile game (Look at Genghis Khan's face, why would he be smiling?). Makes me feel like I'm not playing a real strategy game, Civ V really had that more serious vibe, as if you were really ruling a true /historical civilization.
Stellaris is good but much more complex than V or VI - you'll have to watch several youtube tutorials to get you up to speed. I've got a few hundred hours into it and am still figuring things out. The one thing that is missing from Stellaris is victory conditions - there's only one - score which is kind of a let down.
I could never get into endless legend mainly because of the tactical battles but I've heard it's good.
You could possibly try Civilization Beyond Earth. It's similarish to Alpha Centauri - not as good but similar. Close to Civ V with some interesting enhancements. I prefer the vaniila version as opposed to it with the rising tide expansion.
There is a Civ-type game "old world" made by Soren Johnson who was the lead on Civ IV. It's still in early access but it seems good.
Of course, there's Humankind but I think that won't be out for 3-6 months.
Probably the closest to V (and VI) will probably be Endless Legend or Old World.
The most boring victory of course has to be "Score"...
Oooooo, I just started trying the immortal difficulty setting and was wondering why I was getting smashed early in the game. (I'm pretty new to Civ, so I feel like I haven't figured everything out yet!)
