Per https://civilization.fandom.com/wiki/Great_Prophet_(Civ6), “the number of Prophets available in a given game depends on the size of the map, being equal to half the default number of players plus one.”
Once a game has started,and you want to know how many, if any, of these religions are still available, you go to the religion icon in that row along the top left. The screen opened by clicking on the icon tells you how many are taken already, ,which civ has taken them, and what beliefs have already been snatched by these religions.
Religion Expanded
have as many as you want, up to 16. Makes a difference on higher levels.
On a huge map so 7 possible religions, annoyingly getting close to the end of the game and only 5 have been founded. Still a +15 bonus is solid.
Interesting how some civs didn't go for any religion.
