around that era (1200bc to 1000bc), we see canaanites used slings, bows, daggers and some may have still used the khopesh (if a person could afford or capture one). likely these would not yet have been iron (we can see in 1 Samuel the phillistines had the market cornered on iron smithy 13:19-13:22), so bronze spear heads, axe heads, some swords. Judges 5 explains in the era of deborah (1107-1067bc) the israelite army was particularly ill equipped without shields or spears.
after 1000bc, with solomon's purported riches, those tables certainly turned and israel would have been full on iron age, and likely chariots.
It does raise the question of how the civ would actually be featured in the game. The ancient kingdoms of Judah and Israel are already separate polities, and the united monarchy didn't last very long. You could probably pick some figurehead from that time for leader and civ abilities (at which point things would immediately turn into religious politics because it may be hard to avoid using biblical sources), but what about infrastructure and troops? The modern Israel stuff is obviously out of question.
The series has of course made use of some silly UUs and UBs/UDs like "norwegian" ski infantry (almost as if no other country had employed infantry with skis) or bazaar in Civ 5 (the word isn't even arabic, it's persian), but I don't think that kind comparatively laid-back picking for unique civ features should be repeated.
OTOH why so much love for China? I mean, five leaders? While many interesting civs, even aside from Israel are left out?
