FIXED THIS ISSUE:
I had the exact same problem last night with several friends. The Windows players could join easily but the Mac’s couldn’t. They couldn’t even join each others game.
Here’s the fix that solved it for us:
Go to your steam library, right click civ, open properties, go to Betas, type “ineedlegacyaccess”, click the button that appears to install the legacy version of the game (it’s the version prior to this current build which works fine). It’s a 1GB update so should be done in no time for you!

Then i remembered - we had issues with thread spawning. The solution was to change some parameters in the settings file - /Users/***/Library/Application Support/Sid Meier's Civilization VI/UserOptions.txt -
i wasn't sure what to change - so i just modified the first line (version number) which allowed the game to use its defaults.
This file hadn't been changed by reinstalling the Civ VI game.
Anyway -
with the default UserOptions.txt file - my loading issues stopped and i was able to use all of my mods (mostly user interface mods - like better reporting).
I hope this change - just resetting the options to default - will help someone else - cuz this was very annoying.

This is the only thing that worked for me after trying just about every other suggestion in this thread. I'm playing multiplayer with a windows user and they had to do the same thing to be able to play with me. THANK YOU SO MUCH!
But i have some questions. Does this manipulation change the mods? And should windows players do the same?
Yep, same as me. Tried verifying local files, uninstalling DLC, removing all mods, deleting and reinstalling the whole game, still eternal "loading" screen, for all games.

If the mods worked on the previous version they should still work in theory (at least all mine still do). And everyone playing in the lobby has to be on the legacy version for it to work, even windows players. Hopefully it’s patched soon
