"deforest the world for production thing with builders" - that has always existed (and makes a lot of sense, also happens irl) but has been greatly improved in Civ6 making it less expoitable, because builders have a limited number of charges/actions they perform before disappearing. In the previous Civ versions, workers did deforest for hammers and they could do it for as long as they wanted.
"selling builders with 1 charge remaining for half the cost of a new one" - you can't sell units since 18th November 2016
"selling damaged units to deny experience and get half their cost back in war" - you can't sell units since 18th November 2016
"buying armies/armadas and instantly selling them for more than you bought them for" - you can't sell units since 18th November 2016
In the very beginning you used to be able to chop anything in the world even if it was out of your lands. This was patched in one of the first updates. Now you can only chop what's within your borders.
I guess no new exploits of note that's popped up since?
You could also instantly have peace with a city-state while at war with the civ that was their suzerain, but that's also been fixed.
Can't think of anything else off of the top of my head, current or past.
