All of this comes into play for long term strategy in a given game. If you find yourself in a better position to go to war, then going for the classic domination strategy makes sense, but if you have horrible resources near you for military advancement, you might want to go for a cultural or scientific, religion, or cultural victory.
Else you need to gather enough faith so you can found a Pantheon. Also make sure to slot in the 'God King' policy card. This will give you +1 Faith in the capital. And focus on getting a Holy Site up.

research astrology first (explore map and find a natural wonder fast to boost that process)
expand your border to a flat terrain tile that touches a stone resource
build a Holy Site districts, to earn faith (increase you dont build stone henge first)
once your poilices are activated add the +1faith/+1gold to captial card
other thing is you may find a religious city state apply +1 delegate to it for +faith to capital

Out of the options, the Holy Site Project and Wild Card Policy are the biggest incomes of GP points. And as SamBC said, if you compound this with a lot of faith you can but into the last little bit (also raising the points needed for the next guy as well).
One thing I always find interesting though is that just because you don't have a religion yourself doesn't mean you've lost the religious war, it just means you can't win it. As long as you as well as your neighbors don't get steamrolled by religion you can do your best to draw a stalemate in and around your own borders. Religious units will reflect the religion of the city it was built out of, so if you get another religion in one of your cities, get religious units out and fight for the underdog religion. Personally I find it more fun to do that and juggle what beliefs would be better for me at the time. But it does come down to a dice roll for that initial spread I guess so meh.
