Getting your religion asap is important. For that reason I would go for civs that get a wildcard government slot so you can beeline mysticism on the civics tree and start getting great prophet points early. Russia with cheap religious districts is also possible.
Then make sure you get the Wonders that give you faith bonuses. Keep an inquisitor, or another faith unit that can engage in combat near your "Holy City" to avoid the AI converting it by its spam of units, especially on higher difficulties.
As for other Civs, remember that Kongo loves it if you convert his cities, which if your religion benefits more from adjacent city pressure, can free up some time as nearby cities convert faster without you having to send dozens of units to convert every single city.
Definitely this. I find that keeping an inquisitor in my holy city does deter them from trying to convert it.

It is also about how you build your religion. Scripture / Monastic Isolation / Holy Order are my favs. I usually recruit more Apostles to get into combat than missionaries / inquisitors.
Trade routes also increase your religion pressure so you might want to massively trade to your opponents cities to help you out.
What difficulty?
Also, careful from aggressive neighbors such as Alexander, Cyrus, Kongo (I don't know why it happens to me) or a random schyzophrenic leader.
Also, try to get wonders, and save the apostoles last charge in order to engage in theological combat/get chalices.
If you want to keep it simple, play snowballing with Pilgrimage founder belief. If you aim for religious artifacts, then reliquaries is the way to go as well.
