what happens when you found a city on a diamond
Or any other trade thing. The settler lens is showing a "city" icon because it's a good spot to found a city. But it is on top of the diamond, which I would normally build a mine for with a builder. When I found the city, it disappears.

What is happening?

Resources are not removed by placing a city center on them (not even bonus resources). They will continue to provide their yield (if it's food or production, then note that the city center gets a minimum 2 food 1 production, so if it's say stone on a grassland tile you'll still only have that because none of the yields exceeded the minimum), and when you have the tech needed to exploit them (mining, animal husbandry, irrigation, or combustion) you'll get the empire benefit of the resource.

What ^ said. I recommend to look up some pro civ players on youtube or check out some guides if you are new. Very informative.

Note that that's only completely true for the city center, not districts/wonders. Districts/wonders can't be placed on a luxury resource or a known strategic resource, and will destroy bonus resources without benefit (so go harvest them first). If a strategic resource is present on the tile, but you didn't have them revealed yet, then when it's revealed and you have the appropriate tech to exploit it you will gain the benefit of the strategic resource. You still won't get any yields from the tile, however, as districts and wonders remove those, unlike city centers.
